we’ve got some recipes to spark your foodie creativity.

 
Soup with Farmented Dill Sauerkraut

Broccoli and Cauliflower Soup

Makes one serving, scale up as desired

What you need:

Handful of broccoli 

Handful of cauliflower

Handful of greens (spinach/arugula)

1 garlic clove

1 small potato (options)

1 cup bone broth

Sea salt and pepper

What to do:

Boil until soft, then blend. Top with plenty of Farmented Dill Sauerkraut and a bit of siracha if desired!


Salmon Burger

Makes 4 salmon burgers

What you need:

14 oz canned salmon (drained) or fresh

1 egg, lightly beaten

1/2 cup bread crumbs

1 clove garlic, minced

Zest and juice of 1 lemon

1 tablespoon Dijon mustard

1 teaspoon Worcestershire sauce

1/2 teaspoon red pepper flakes

Sea salt and blackpepper to taste

1 tablespoon extra-virgin olive oil

Hamburger buns, for serving

Mayonnaise, for serving

Romaine, for serving

Tomato, for serving

Capers, for serving

Dill Sauerkraut, for serving

What to do:

  1. In a large bowl, combine salmon with egg, bread crumbs, garlic, lemon zest and juice, dijon, Worcestershire and red pepper flakes. Season with salt and pepper and stir until fully combined, then form into 3 to 4 patties.

  2. In a large skillet, heat oil. Add patties and cook until golden, about 4 minutes on each side.

  3. Serve patties on buns with mayonnaise, romaine, tomatoes, and capers, Dill Sauerkraut.

Mom’s Meatloaf

The comfort of mom’s home cooking, topped with dill sauerkraut for a little zing! Makes 6 servings

What you need:

1 1/2 pounds ground beef

1 egg

1 white onion, chopped

1 cup milk (or any dairy-free milk alternative)

1 cup dried bread crumbs (gluten-free bread works great too)

salt and pepper to taste

2 tablespoons prepared mustard

1/3 cup ketchup

What to do:

  1. Preheat oven to 350 degrees F.

  2. In a large bowl, combine the beef, egg, onion, milk and bread. Season with salt and pepper to taste and place in a lightly greased 5x9 inch loaf pan. 

  3. In a separate small bowl, combine the mustard and ketchup. Mix well and pour over the meatloaf.

  4. Bake at 350 degrees F (175 degrees C) for 1 hour.


Kimchi Cocktail Sauce

Add a couple tablespoons of radish kimchi to your favorite shrimp cocktail sauce or try our simple recipe! Makes about 12 servings.

What you need:

2 cups ketchup 

2 teaspoons Worcestershire sauce

2-3 tablespoons kimchi 

1 teaspoon lemon juice

2 teaspoons horseradish (adjust to taste)

What to do:

Mix all ingredients together. If you wish to have a smooth sauce you can blend them together in a food processor or blender.

Potato and Egg Salad 

What you need:

6 eggs, hard boiled

6 small Red or Yukon gold potatoes, or similar

½ cup mayo (we love Primal Kitchen Avocado Oil Mayo)

3 tablespoons yellow mustard

½ cup Farmented Spicy Carrots, chopped

¼ teaspoon fresh dill...or just add Farmented Dill Sauerkraut :)

Salt and pepper to taste

What to do:

Once you have your eggs hard boiled, shelled and cut into small pieces place them in a bowl and set aside. Cut potatoes into quarters or smaller, boil in a large pot until tender. Run under cold water. Place in a large bowl with hard boiled eggs. 

In a small bowl, whisk together mayo, mustard, and fresh dill. Pour over egg/potato mixture and mix until well coated. Salt and pepper to taste. Top with chopped Farmented Spicy Carrots.


Farmented Ramen

Feeling a bit under the weather? Or do you just want to give your immune system a little boost to keep running in tip top shape? Whip up this simple yet flavorful soup to warm you up or help kick that pesky cold!

What you need: serves 4

4 cups chicken bone broth

2 chicken breast (optional)

Soba noodles (2-4 bundles)

4 cloves of garlic, minced

1 cup cauliflower, chopped

1 cup carrot, chopped

1 cup shiitake mushrooms

1 tablespoon fresh grated ginger root

Tatsio leaves (optional: substitute spinach)

Sea salt to taste

Garnish options: lime, green onion,

How to make:

  1. Boil a few cups of water and add soba noodles. Cook according to package instructions, then drain and rinse well. Set aside.

  2. In a large pot, bring the bone broth to boil over medium-high heat. Reduce the heat to simmer and add in garlic, ginger, shiitake mushrooms, cauliflower, carrots and tatsoi leaves. Cover and let simmer for 12 minutes, or until carrots and cauliflower have softened. 

  3. While the broth is simmering, cook the chicken breasts in a skillet (or bake to your preference). Let chicken cool and cut into small pieces. Add cooked chicken breast to broth when finished. *Top with kimchi

*Don’t forget the Farmented Radish Kimchi for that immune boost!

Farmented Ramen

Taco Tuesday

Taco Tuesday!

If you’re like most people, you love tacos and you love any excuse to eat tacos. Why not make your gut extra happy by adding in a little Farmented goodness?

What you need:

Taco shells (soft tortilla shown but you do you)

½ lb ground beef (or your favorite taco meat/meat alternative)

½ C. onion, chopped up

1/2 C. chopped bell pepper

1 TBSP taco or fajita seasoning

Chopped greens

Farmented Spicy Carrot Chips

Add Ons:

Avocado

Cheddar Cheese

Green Onion

Fry your meat over medium heat until cooked through. Add in the onion, bell pepper and seasoning and sauté on medium heat for about 1-2  more minutes. Now all that’s left to do is assemble the tacos just the way you like it! We love a little bit of everything and a little extra Farmented Spicy Carrot Chips ;)


The “Dill-icious” Salmon Salad

A perfect pairing of salmon and Farmented dill sauerkraut

What you need:

Salmon

18-24oz of salmon

Salt and pepper

2 cloves garlic - minced

½ medium onion - finely chopped

2 TBSP butter

Fresh lemon juice

For the dill sauce

⅓ cup sour cream

⅓ cup mayo

1 TBSP finely chopped onion

1 teaspoon fresh lemon juice

¾ teaspoon dill weed

¼ teaspoon garlic salt

1 teaspoon horseradish (optional)

For the Salad

Chopped greens of your choice

Diced avocado

Sliced cucumber

Farmented Dil Sauerkraut

The “Dill-icious” Salmon Salad

Preheat your over to 400 degrees F. Salt and pepper the salmon and place on a foil lined baking sheet. Saute the garlic and onion in 2 TBSP butter. Squeeze ½ of a fresh lemon into the melted butter mixture. Pour butter mixture over salmon, cover in fresh lemon slices and bake for 12-20 minutes. Make sure to start checking your salmon early as you don’t want to over bake it!

While the salmon is baking mix together all the sauce ingredients. Assemble your salad greens, avocado and cucumber. Add the freshly baked salmon, drizzle with the dill sauce and top the salad with several scoops of Farmented Dill Sauerkraut!

Sunday Morning Lox of Love

We love brunch and this recipe gets “lox” of use. We hope you enjoy it too!

What you need:

English muffin (or toast of your pick)

Cream cheese

Lox

Avocado 

Egg cooked to your liking (basted in this photo)

As much Farmented Dill sauerkraut as needed

Assemble all the above ingredients on toast and enjoy just one or two or three!


Cranberry and Sauerkraut Meatballs

Looking for a great Super Bowl snack? This one takes home all the glory. With Kraut in and on top of the meatballs, everyone’s going to love it.

 

What you need:

1 1/2 lbs Ground beef

1/2 lb Ground pork

2 Eggs - beaten

1 tsp Garlic powder

1/2 tsp Black pepper, ground

1/2 tsp Salt

1 cup Bread crumbs

Meatballs

Sauce

1 jar of Farmented Dill Sauerkraut

1 12 oz bottle Chili sauce

1 14 oz can Cranberry sauce, Whole

3/4 cup Brown sugar

Combine the ground beef, pork and seasonings in a large mixing bowl. Mix in beaten eggs to the meat. Add in the breadcrumbs and mix until combined. Form into meatballs (about 1in thick). Place the meatballs on a lined cookie sheet. Bake for 30 minutes at 350 degrees. Move the meatballs from the oven to your slow cooker. In a bowl, mix the cranberry sauce, sauerkraut, brown sugar, and chili sauce until fully combined. Pour over the meatballs in the slow cooker. Slow cook on low for about 4 hours and serve!

Pro Tip: Top the meatballs with additional kraut for extra deliciousness!


Cream cheese and kimchi app

Fig Cream Cheese and Kimchi Appetizer

Lots of holiday parties? Love entertaining? This is a quick, easy and crowd-pleasing dish that is sure to be wiped clean by the end of the night.

What you need:

Cream Cheese

Apricot jam (or your favorite preserves)

Small bowl-full of Farmented Radish Kimchi

Your favorite crackers

Put the cream cheese in a small dish and top with the jam. And the kimchi to a different bowl and serve with your favorite crackers. 

Add a bit of the cream cheese mixture to your cracker, top with kimchi and get ready for all the YUMS.


The Kimchi Scramble

What’s better than starting your morning off with a healthy dose of happy gut cultures? Adding kimchi to your favorite egg scramble is one of our favorite, quick and easy breakfasts!

What you need:

2 eggs beaten with a splash of milk

2 slices of onion, chopped up

1/4 C. chopped bell pepper

1/4 C. chopped greens

Heaping spoon-full of Farmented Radish Kimchi

1/2 an avocado

Sauté the onion, bell pepper and greens on medium heat for about 1-2 minutes. Pout the egg mixture over the veggies, slowly breaking up the egg mixture until cooked through. Top it all off with some Farmented Kimchi, the diced avocado and enjoy!

*Top off with a bit of extra sharp cheddar if you’re into that sort of thing. We know we are ;)

The Kimcheese

A Farmented favorite, our signature kimcheese is sure to get your tastebuds going.

What you need:

2 slices of sourdough bread (or your favorite type of bread) - buttered on the outside

A bit of goat cheese (we like a lot but it’s a personal thing, we get it)

Sliced extra sharp cheddar cheese

Heaping spoon-full of Farmented Radish Kimchi evenly spread out in between layers of cheese

Assemble, pan fry on medium heat and enjoy!

*Top off with a bit of miro-greens for a little something extra


Salad Topping

Any salad is better when adding some Farmented Spicy Carrots to the mix. Here’s one of our favorites but feel free (like you need permission from us) to make it your own!

What you need:

Salad greens + micro greens

Farmented Spicy Carrots

Red onion, beet, tomato or whatever other veggies you wish

Plum or other tasty fruit

Gorgonzola crumbles

Chop, mix and enjoy! *Pro Tip: use the Spicy Carrot Brine as a vinaigrette! #winning

Grilled Chicken Sandwich

Adding a bit of Dill Sauerkraut instead of pickles to your favorite sandwich adds that delicious dill flavor you love with a special kick!

What you need:

2 slices of your favorite bread, lightly toasted

Thin cut chicken breast, seasoned and grilled

Lettuce greens, tomato slices, red onion

Favorite sandwich dressing (we like mayo and a dit of dijon)

Spoonful, or two, of Farmented Dill Sauerkraut

Assemble and enjoy!
